    D80 Taking Very Long To Ferment...

    That is pretty much what I was thinking... The ferment isn't stuck and still going nicely with a good cap, not lacking any nutrients. My D254 on the same grapes (Cab/Sangiovese) is complete and moved faster than the D80. My Zin with Avante was incredibly fast, only took 4 days!

    Looking good Mike! I always give it a few extra weeks resting before stabilizing with sulfite just to ensure MLF is completely done. Great set-up, love the steel tanks.

    Yeast

    I stopped killing the wild yeast with sulfite a few years ago and have never turned back. My fruit is always decent and having no sulfite at crush makes things easier for MLF. You should have nothing to worry about.

    I have never done it that way but you should wait until primary alcohol fermentation is complete. VP41 instructions suggest 24 to max 48 hours after pitching yeast depending on your So2 levels at crush. Have a look...

    Yes the timing does matter very much. It needs to be added 24 hours after pitching your yeast so you are too late for co-inoculation. You will need to stick with sequential. FYI - BM4x4 works perfectly fine with co-inoculation and I have used it several times with VP41 in the past.

    Here is a good read for you Mike. I have always done co-inoculation with VP41 and kept the same yeast/nutrient schedule. Always add the MLB exactly 24 hours after yeast.

    Any experience with AVANTE (ANDANTE) YEAST from Renaissance?

    I have never added any MLF nutrient with VP41 and never had any problems. Only FermK when pitching yeast and halfway through ferment.
