    John, my 2018 blend was 63% Cab/22% Merlot/15% Cab Franc, all Lodi fruit. It is coming along really nicely and looks like it will age beautifully. Would have loved a small portion of petit Verdot but cant get my hands on any down here in Montreal. Good luck.

    I actually bought a case of wine that had these glass tops and they work great. I have been using these 12 bottles for my wine now. They work really well and look a hell of a lot better than screw caps. I still cork most of my wine however.

    I’m definitely not embarrassed! It has really come along nicely. The entire room painted, new lighting, a lot of racking secured strong enough for an earthquake! I have a few more things to do... I’d like to make the middle rack into a table for tasting and few more touches.

    Thanks guys for your inputs. I never used the ActiML in the past so I'll probably just stick with the regular water rehydration and poor it carefully. Last year I actually added more water like 100ml and MLF worked just fine.

    I have always used VP41culture in the past doing co-inoculation and it has worked out well sometimes just sprinkling it in the must or rehydrating. My question is regarding rehydration of a 66 gallon dose. Instructions are to rehydrate in 20 times the packages weight of 2.5 grams, so 2.5 x 20...

    Glad to hear that you have had no issues with 3.9PH in the past. I may do some bench trials or just give it some more time in the barrel.

    I made a 100 percent Sangiovese last year that has been bulk aging for 10 months or so. I bottled some recently and it is still really fruity and floral, good but could be better. I just checked the PH and it’s high at 3.9. Should I add some Tartaric to lower it down?

    Nice. So you chose this over the D254/D80 combo? I read that it also consumes 30% of the malic acid as well. Did you pitch MLF after or not even?
