    Which Yeast would you choose

    Did you inoculate with MFL bacteria after using the Avante yeast? I hear that it consumes a fair level of malic acid during fermentation so I am just curious if MLF is needed after pitching this yeast...?

    My thoughts exactly... The Cab that was in it before had quite a bit of sediment that seemed to fill the gaps in the staves. Maybe after cleaning it with hot water this opened things up. Either way I'm not too concerned,.

    John, I noticed your bottles all have the plastic shrink tops on them. How do you apply them? Boiling water? Steam? I can never get them on perfectly.

    That is one beautiful looking barrel I must say! John - is your Cab smelling and tasting extremely floral/fruity from the BM4x4 VP41 combo? Mine is big time. It's gonna need some time and oak to settle off the heavy floral fruity aromas.

    Oh don't get me wrong, I have bottled wine that I made in my cellar that dates back to 2014. I do agree very much that bottle aging is paramount.

    Yes I rack approx. every 3 months whether the wine is in barrel or demijohn etc. I add a small amount of So2 at each racking.

    Both very important in my opinion. I barrel age my wine as long as I can, normally anywhere between 3-6 months and then bottle. I have noticed significant improvements letting it sit in the bottle on it's side for at least 3 months before drinking
