    If clear, why rack?

    If there is any sediment on the bottom, continue to rack every few months. Once sediment is gone, no need to rack anymore.

    Built a shelf in my garage to hold my carboys. Garage gets close to freezing in winter, but not below freezing. Should help cold crash and get the tartar crystals to drop out. This is just for the stuff I made this fall (and not quite all of it, 5 more carboys in basement that won't fit here)...

    For anyone else in this situation, this did help a lot. Got about 22L from the 80ish lbs of apples. the freezing and pectic enzyme did soften them up a lot.

    Bottle Sanitation With Star-San

    I'd certainly sanitize again, but then again my cousin who bottles several hundred bottles a year just takes bottles out of the box right from the factory and doesn't sanitize at all.

    Took out of the freezer today, dumped a 20g packet of pectic enzyme in, and some bought cider to help distribute it. will see tomorrow if it helped soften everything up.
