    Wow! Cab already? I do not believe mine will be picked for a couple weeks yet. 13% not a bad Cab but could always balance out to your likings before fermenting.

    Yes.... Shipped to MI but I will tell you they land at almost $6 a lbs. Ya I am crazy. But love drinking great wine. The taste is unbelievable.

    I noticed this in many different types of barrels after they got over 3 years old. All were smaller from 6 to 15 gal. Always did cubes or stave infusion but nothing like the clean taste of a newer barrel.

    We can compare the process of micro oxidation from flex tanks to barrels. But that is only part of the equation. I do not believe you can achieve in today's technology the duplication of a good oak barrel with cubes or sticks..... I use both all the time.... They are different.

    Maybe because I am very particular on the taste of my expensive wine. But I actually find that when a barrel get's too old even oak spirals or cubes cannot stop the off taste of an old barrel taste getting into the wine..... Time to retire!

    Really takes months not weeks.... But it really depends what taste you are looking for. A few months of a spiral will really not make or break.

    I have used many barrels over the years.... No substitute for the great taste of an American Oak! Vadai has a great price point but not near American Oak. I have come to enjoy American Oak over French much better....

    You can.... I do it in carboys so it gives me a better chance to observe and then perform another clean rack in 8 weeks. Then to the barrels.
