    Kit Blending

Never with the Eclipse quality of kits! Blended a Fontana Cab Sav and Pinot Noir....both were just Mehhh at best. Blended, is like turning on the light switch. Right now we just do bottle blending, not batch blending. Just a side note, so far, we have liked most of our results. Now that could...

Other Fontant Malbec with Joeswine "Tweeks"

Just bottled our third Fontana Malbec....everybody loves this one with Joe's tweaks. I pretty much follow Joe's flow except I add cherry wood while bulk aging. Does the cherry wood make a big difference? Could not say...made it that way the first time and just keep doing it that way because we...

    when good wines gone bad

Joe...what is your reasoning for just sprinkling the yeast on the top and not stirring? I started making beer first, then wine. The instructions on the yeast package say re-hydrate, so I do. Besides, Grand Mother always "proofed" her yeast when making bread. Just curious! Thanks.

How do you oak your wine?

I just finished a Trinity White batch and was under-whelmed with it...I split it and "oaked" half of it with a LD Carlson product called Dual Smooth. It had a package of glycerine and package of liquid oak extract. American Instant Gratification at it's finest....so far. It did make an immediate...

    Thick Mustang

Not to rain on your parade, but there are tons of different types of wild yeast out there. Some good, some bad. I don't know what you have and neither do you...but it doesn't sound good. I have a small stash of yeasts in the fridge....several different types...all proven good...might have 7-8...

Help Please: How do you let wine age?

GOODNESS MAN! That statement flies in the face of all that is sacred to serious wine makers. I like the way you think!

    Frozen concentrate!

lepridgeon....look here...might seem kind of high priced but compare to buying 20-30 cans of FAJ for a five gallon batch! http://homewinery.com/cgi-bin/concen.cgi

    Weber Performer grill....

Go to Walmart and get one of those metal oil change pans and place it under the bottom of the grill. It'll keep ash and grease off of your nice deck. I gave up charcoal years ago just because of the hassle of lighting, the mess from ash....seemed like I was always cleaning up to get started...

Help Please: How do you let wine age?

i am into a cheap fast early drinking kit and then a bigger kit that needs more time to age rotation. My hope is I'll have the faster early drinking kits so the better stuff has a chance to get some age on it. Not my idea, I read it here and it made sense to me. So far so good.

    Fixing an auto siphon

I think I read somewhere you could just drop in a dime and it would do the job....BUT I have not tried that nor do I wish to try it. I now have a AIO vacuum pump, but I still like my auto siphon.

    Other hey Joe!

The extracts wound up getting mixed together with my wife's help...she was helping...can't undo it...no biggie. So two gallons got a 1/2 pint of lemon orange extract. Perked it right up too, brightened the flavor...but does not taste like lemons or oranges. The other three gallons got the...

    Other hey Joe!

I knew you were gonna say that! I'm more of an instinct shooter and hate lab experiments. Think I'll split the difference with y'all. Bottle some straight, some with a liquid oak, some with extract....heck now it's started to sound like a lab trial :h:h tried some chilled and it had some...

    Other hey Joe!

got a batch of California Trinity White that I am not impressed with right now. I have Myers Lemon and a Cutie Orange extracts that I think would add that extra something. Got a rough guideline on how much to start out adding? Have half a pint of the Myers left, the rest went into some...

What do you do during the clarifying stage?

I fish, hunt, or go shoot sporting clays. But, most days I actually just work because it makes my boss look good. I do peek under the tee shirts covering the carboys once in a while.

    Sweet Tea Wine

I find the flavor to be there, but very faint. Folks taste it and say it has a famieral taste....but they can not place it until you say TEA. Then they pick up on it quick. I did start with boiling water, added my bags of supermarket "tea dust", let it steep over night, and then into the...

    Not around much

John, I think for some folks the guilt is harder to deal with than the grief. Death can be a huge relief, for all parties. All parties just have to deal with it in their own way. My own family as long as I can remember has talked about death being the natural end of life. We view death as...
