I've been putting in the sorbate as instructed in the kits, but all mine are dry with no additional fpacks. So, if I understand your comment, the addition of sorbate is not needed, even if instructed?
I transferred my last two kits to secondary at .995 because of personal reasons and did not get to transfer earlier. I doubt it makes any difference. I left them in secondary for another week and both finished at .993 and .992 so quite dry.
This was my first kit and it was tasty a few months after bottling and now a year later we are still amazed by how smooth this wine is. It will be a staple in my cellar.
Jim, thank you for your post. It confirms that I did the right thing by going all in with the whole fpac upfront. I don't care for sweet wines. Get one!
Mike, I already pitched the yeast, a couple of hours ago. Can I add the fpack at this stage, at second fermentation, or do I have to wait until the end?
OH, darn! I wish I had seen your post before I finished starting it. I was hesitant about putting the fpack up front, and thought I'll just follow the instructions. I hope it's not too sweet. I wonder.....could I still add it, or maybe wait until I rack to secondary? Just pitched the yeast two...
I understand, but this did get very strong, positive reviews, so I thought I would try it. I do plan to do the Pinot Noir Rose as well and will start looking for it. Thank you for the input! I'm sure the two will be very different, and that's great!

Jim, I did find the SB Rose, on Amazon, free shipping, and am going to make it. Still deciding whether to make fully dry, or off. I like dry wines, nit sweet, but hard to know just how sweet "off dry" is. Thanks for the advice!
Thank you, so if not bulk aging (though highly recommended) there is no need to add additional k-meta for bottling even though bottles will age for years?
WE Eclipse SB step 4 instructions, racking and clarifying, say to add metabisulphite if you age wine more than six months. Do they mean if bulk aging, or does this mean total aging which includes in the bottles? These wines will spend years in the bottles, after the one month clarification. So...
Enjoyed a bottle of Blueberry Lemonade, after six weeks of bottling, and it was smooth and delicious. I split the fpack, and it is a little sweet for us...like a great Sangria base. Very drinkable! If I make it again, will put all of the fpack upfront. Very tasty and surprisingly enjoyable!
