    The instructions say to rack to a carboy, after 5-7 days, leaving thickest sediment behind. Did anyone stir it before doing this step, allowing it to settle again, then siphon? Also says not to top off at this step (secondary 10 days)...did you all do thus as instructed? Thanks!

    Mine was bubbling after a couple of hours! Vigorous fermenting these past two days, maybe I should check my reading as wel, but the instructions say to leave it undisturbed for 5-7 days....what's a newb to do? The whole house smells awesome!

    Just started my Blueberry HL today. Added about 1/3 of fpack up front to reduce sweetness. Smells very good. SG is 1.058. I know I'm behind, but it will be ready by next summer!

    I was cleaning and sanitizing all my equipment to start two kit batches today, and broke the hydrometer. My home brew opens at 11am tomorrow. Can I start and pitch yeast, and wait to take first reading tomorrow. Or should I call it a day and wait until tomorrow? I'm buying three tomorrow.

    Ok, so I delayed picking up the kit, and haven't made it yet. I'm wondering if it will keep until next year, bottled, if I make it later this summer. I feel I missed this year's opportunity and wonder if it will age well.

    Paul, thank you for the thorough reply and explanation! The wine which I like is white, not red, so I should have mentioned that in my question. Any thoughts regarding the white? I agree with the fruitiness you mentioned, though, and I like that it is not sweet.

    I recently rediscovered a white wine I loved in the 80's. Rothschild Mouton Cadet, Bordeaux. It was much more expensive back then! So, is anyone familiar with a wine kit which would be similar?

    Thank you, I think I will do that to have a slightly sweet wine. Besides that we don't care for overly sweet, my husband is diabetic and I need to keep the carbs down as much as possible.

    Mine has arrived as well. I will not want it very sweet, shall I add all the fpack upfront? If I do that, will the flavor still be strong? Is anyone going to add frozen blueberries to boost the flavor?
