What’s wrong with whipping to degas?

Whipping helps the CO2 in the wine to quickly escape from solution but, at the same time, it also introduces oxygen into the wine. That is most likely the reason kit manufactures include a healthy dose of potassium metabisulphite for addition to the wine at this stage. The potassium...

Color of Cab @ 3 months aging?

It does look a little light as Paul said, but the most important characteristic of this wine should be the flavor. How did the sample in that glass taste to you? Did it taste like a cab? Was the tannin light, as the color would lead one to believe, or heavy tasting? The Lodi Ranch kit has been...

    Winexpert Eclipse Three Moons

I started my kit today and was concerned about the 1.072 SG reading. Went ahead and added RC-212 and a quarter teaspoon of diammonium phosphate in expectation of grape skins adding sugars to the must over the next few days. Going back over this thread, I felt better about this seeing that...

    Three piece corks

I experienced twin top corks breaking recently when I began tapping into a batch of wine made 18 months ago; so I started looking for a solution and think I found it. Two wine batches bottled in the last 6 months were corked with #9 Acquamark All Natural Corks. These corks are only a few bucks...

    Winexpert Vinyard Moscato Wine Kit

I made the Pink Moscato kit. It came out OK, not overly sweet. While my wife likes it and I sometimes drink it, I don't get many others wanting it at out monthly wine club tasting parties.

    Fabulous Photo

Sorry Lando545, I wish that I had that information. The original poster's comment stated that he took the picture on his way to work at 'the' winery. He or she didn't give the name of the winery nor did he/she give its location. I seldom post pictures, and on reflection after the post, decided...

    Cleaning station

Nice looking installation! I also live in central Florida. Unfortunately, the bedroom I'm using as my wine room is on the opposite side of the house from my garage. Were it otherwise, I would strongly look at implementing your ideas. I currently clean my wine making equipment in my garage sink...

    Fermentation Temperature for Red Wine

The mid 60's will work fine but at a slightly slower fermentation than the high 60's to mid 70 degree range. Kit manufactures recommend the mid 70's to better meet the time factors in their kit instructions. Here in Florida, I tend to keep my house between 70 and 75 so that's the range I...

RJ Spagnols BM 4x4 first time using

Assuming that you added the 1 TBS of fermax the 6 gallons of wine, it sounds like you did good. BMX 4X4 is an aggressive fermenting yeast like EC 1118 so you should see fermentation beginning within 24 hours. I've made the same yeast substitution several time and have had good results.
