    So, right now my alcohol content is 12.77%. If I let it go to .992, it will be 13.5%. That isn’t that big of a difference to me. However, I don’t have sorbate so I guess I’m riding it out for now. I should get some ordered. Is it safe to say the bitterness goes away with time?
