    I have just come out of quarantine today, so will be off to see my new neighbors asking for tips. I have a lot to learn. Is the Primary fermentation done in a closed container or open. I read that it needs oxygen stirring into the mash when pressing down the pulp.

    Should I be concerned about my wine press with wood worm introducing unwanted bacteria at an early stage. When I will be adding sulphates to kill of unwanted bacteria and yeasts prior to fermentation? What type of wood is best used in a wine press, if I decide to rebuild the wooden section?
