    k-meta?

Thanks !! That is likely why one of my wines has a slightly higher Ph than the others, the vines were growing a bit wild and they were the last I harvested. All the grapes might not have been as ripe as they could have been be due to how they were growing in varying degrees of shade. I have...

    k-meta?

My Verdelho, American Tinte, and Alverinho all produced wines with Ph around 3.5. My Marinho and Cheiro Vines blended produced a wine with a Ph of 3.0 which is a bit acidic but still fruity and drinkable. Would altering the Ph of the soil, alter the Ph of the wine produced?????? Last year I...

Can vineyard exist without chemical treatment?

I am a beginner to wine making, so I might be wrong :) Potassium Bicarbonate might not be a good idea How to Treat Powdery Mildew Using Homemade and Organic Remedies. Its used as a preservative not to treat mildew. What varieties of grapes are you growing, are they disease resistant? One of...

    Acidity?

Perhaps not a total beginner this year, last year I definitely was :) I was busy spraying my vines for downy mildew this morning and my mind came back to this thread. Reducing acidity by adding Potassium Carbonate or Calcium Carbonate, is a way of reducing acidity. Would another viable way...

    Acidity?

I also make fruit wine some from oranges, and note orange wine does not oxidize as grape wine does. The only reason I have for this is Vitamin C ascorbic acid content. When adding acid, to reduce the Ph in a grape wine, would ascorbic acid have any anti oxidant advantages ??? I intend to have a...

    k-meta?

I understand when wine is in large storage containers, adding k-meta every 3 months is recommended. What about when the wine is bottled into 75cl bottles ?? are people still suggesting adding k-meta every 3 months, or should the wine not be bottled until you are ready to drink it ??

In what ways and at what stages can PH levels be adjusted in grape wines?

    Ascorbic Acid

My wifes 70th birthday is coming up, and she wants a big party. So I guess a lot of my remaining grape wine will disappear, along with a lot of other fruit wines and alcohol I have made :) I was wanting to know if there is something I should be doing to control the acidity? I am suspecting I...

    Ascorbic Acid

I have been enjoying last years wines. However!! I am now down to my last 15 litres of red wine from last year. The last 5 litre jar I bottled, tastes more acidic than the previous jars. Is there a reason for this?? Should I be putting more k meta in the jars?? I read on the forum that people...

    Ascorbic Acid

The Ph on my Orange wine is 3.6. It is not hard on the pallet. My red wines are fruity, and about the same Ph. We drank all the white wine :) before I bought a Ph meter. I dont have anyway of measuring Tartric Acid, but have noted lots of acid crystals inside my barrels, between rackings...

    Ascorbic Acid

I have found that my fruit wines do not appear to oxidize like my red wine does when it is left exposed to the air. The only reason for this appears to be oranges are higher in vitamin c, than grapes. If you only fancy a single glass of wine rather than the entire bottle, would there be any...

Is Barrel Topping Really Necessary? Test started today...

Oranges, Grapefruits and Lemons have much higher levels of antioxidants, than in grapes. Could this be the reason fruit wines don't oxidize so easily. A chemist might know? Edit I dont understand the following BUT Quinones might have some thing to do with it...

Is Barrel Topping Really Necessary? Test started today...

Stupid question, Should you be disturbing the barrel? Why Oxidized Wines Are Bad but Oxidative Wines Are So Good . From what I have been reading in many links the oxidative wines of Jura in France, rely on a film of mold developing over the wine to prevent them becoming over oxidized. Edit...

Is Barrel Topping Really Necessary? Test started today...

I had a excess of oranges growing so I made some orange wine, to see what it would be like. It does not taste acidic. It was bitter due to me fermenting it on the skins, so I sweetened it for my wife. She has now claimed as her own! The following batch I fermented off the skins, and am waiting...

Is Barrel Topping Really Necessary? Test started today...

Interesting! I have a some fruit wines, and have noticed they don't appear to oxidize, when we only drink part of a bottle. Where as with grape wine it oxidizes over night. Do citrus fruits lack some chemical makeup that grapes have allowing them to oxidize?

    Fresh Fig Wine

Figs, Ginger, and Chillies make a very nice chutney :) Sounds like you know more about wine making than me.

    Fresh Fig Wine

Sorry Ive been having boat problems and been away. I did nothing special except follow instructions. I picked the figs as they came ripe, chopped them into quarters, stored them in the freezer until I had enough to ferment. Then I put them in the fermentation barrel, with by volume 50% figs and...

    Pruning Grape Vines

I have finished my first pass pruning my vineyards and trellises, with only a couple of accidental wrong cuts YEAH. Throughout the process I noted the previous owner appears to have used both vine pruning and spur pruning of trunks and spur pruning from cordons, mostly supported in some way...
