    Starsan...and then what?

When I rinse my bottles with star san I always end up with bubbles in the bottle. I don't like them, but I've read that they don't hurt anything. How do you mix your sulfite solution for that?

Rick D- So you area Teckle guy too. My Teckel is Marley. She is known fairly well throughout Kansas. She is a little tracking machine!

    What's for Dinner?

Busy Easter Sunday here and I even bottled my first two batches of wine! (It was a bit of an unorganized circus but that's another story!) I was tired so tonight it's meatloaf made from venison, a little beef and some homemade pork sausage.

    What's in your glass tonight?

    Tonight Spanish Tempranillo.

We may have lucked out. 5:00 a.m. and it's only down to 34. We are on a rocky hillside so the cooler air tends to settle below us. It's supposed to warm up after tonight. Fingers crossed.

Skeeter is now my best seller

I removed the airlocks, covered with a cloth and tried to do at least a minimum of stirring. I took a few sips (too sweet and not much flavor yet) to add a little space at the top so I could stir without overflowing. Funny thing was I woke up at 3:00 a.m. and was worried I couldn't hear it...

Jovimaple-thank you. I think I will go remove the airlocks right now and set a towel over them. I think perhaps I will purchase 3 food grade buckets. I can rack and divide this into 3 buckets. That would be easier for me to manage weight wise anyway. There is not much sediment at the bottom...

I have not looked at colomafrozen. I will definitely be doing that sometime. With this unexpected "double batch" of Skeeter Pee my little winemaking area is pretty full right now.

We are expecting 30 degrees tonight. I may not get any peaches again. Every year I end up buying fruit in the fall. I buy peaches, pears and apples from an Amish group near here. They have great produce. I can about 200 quarts of different kinds of fruit each year. I've had to use some of...

    consumption lol

LOL! Peaches! I love them and have two nice peach trees. They grow such nice peaches. It's supposed to be 30 degrees tonight so we will see if any peaches set on since the trees were blooming this morning. However, If they do grow 99% of the time the deer manage to steal them all in one big...

Thank you! The weather should be right for planting pretty soon.

Yes, I have this under airlock. I started with one batch. The acid from the lemon must have been too strong so I split it in half, added water to two carboys with extra sugar, nutient, energizer and ended up with enough to fill a 6.5 gallon and 5 gallon carboy. It started right up when I...

Skeeter is now my best seller

My Skeeter was percolating right along but has slowed down to 1 burp about every 7-8 seconds. SG today was 1.05 and 1.07 on these two. I'm wondering if I need to add a little more nutrient or energizer for the yeast. I'm hoping it doesn't stall too early. The taste was fizzy, slight lemon...

I have a batch of sandplum wine ready to bottle. I'm just aging it in the carboy for a little while yet. A local to the area said they think the vines (the ones that are left) in my neglected vineyard I purchased are concord. I am planning to plant some traminette and petite pearl. I was...

There are a number of pecan trees in the yard, but they are not the ones hanging over the vineyard. One is a hedge tree (osage orange) and the other I'm not sure about but I'll figure that one out pretty soon when it greens up.

I've been out that way many times. It's a little drier there than here. That's probably a good thing for a vineyard. My little vineyard is not on a slope and I'm wondering if the ground is too wet for a good part of the year. I guess you just never know about the weather around here!

Dawg-I think I will try this, only modify it a bit. I like the idea of more lemon per gallon, but I think one fifth of the 180 proof to my 11 gallons would be sufficient. I'm not sure yet. Once this has quit fermenting I will check it, taste it and go from there. I just like the idea of more...

What percent alcohol do you end up with? I have 11 1/2 gallons going now. It was a rough start, but they have been going well for a few days now. For this much I am wanting to fortify it and divide it into several batches that I would then add different juices to make a variety of flavors...
