Yea I am thinking about getting enough for a 3 gallon batch. This early spring weather is getting harder and harder on fruit trees. We waited to prune our grapes hoping to keep them dormant a little longer.

You are most welcome !! It’s such a fun process and very addicting. If I don’t have something fermenting I get itchy. Lol.

Cherry berry plum with cacao nibs

I bought some several months ago. I have not looked lately. I didn’t ferment the mix.. I racked a triple berry wine that was aging in secondary onto a carboy I had stuffed the plum berry cacao nibs into. I let the wine sit in the fruit for about a week then racked off the fruit/cacao .. I had...

First a little background on fermentation. Forgive me if you know this info.. I just want to be sure we are on the same page. Primary fermentation is when you first pitch yeast and it starts eating the sugar in your juice to make alcohol. The more sugar you have in the juice/must the more...

If you decide to rack be sure to leave the lees on the bottom and not rack them into your wine. Your wine needs some time to age. If you bottle now, the bottles will most likely end up with lees in the bottom of them as the wine will continue to drop out lees for a while.

I wouldn’t give up yet. I would rack it to a smaller carboy Or top it up with a similar wine ( this is controversial and a personal opinion but a similar wine would be pretty easy .. yes it may cause the flavor to change a little. So that decision is yours. I would buy some potassium...

K-meta is an abbreviated term for potassium metabisulfite. You should read up on it’s use but briefly it used 24 hours prior to pitching yeast to get rid of unwanted wild yeast. So you start with a clean slate so to speak when you add your yeast. Then adding k-meta when racking helps protect...

I wasn’t thinking when I asked that ... your wine wouldn’t be clear yet bring only a week old. Ours is clearing slowly. We also added pectic enzyme in primary. I am thinking I will need more clearing agents and more time too. Have a great day !
