    How do you go about testing your wine, when you have 12-5gal carboys and a barrel? All at once, break it down into lots over days or just random? Goes for SO2, PH and TA.

    Bottled the SLM tonight along with Forza, the AIO makes this such a breeze! Filtered it through a 5 micron filter as well.

    Bottled my Forza tonight, running it through a 5 micron filter via the AIO. Of course there was the required tasting, can't wait for this to see time in the bottle. Did have one bottle break on me as i was inserting cork, did not have bottle centered correctly. :(

    There will be 14 of us, only a few who really like turkey, so we have on order a 6-8lb. bone in turkey breast. This will go on the rotisserie, in the oven will be a rib roast Of course all of the required sides and desserts and wine to make you repeat "I can't believe I ate the whole thing"...

    Wine seepage at bung opening

    Is it normal to see any seepage at opening all the time? It's been 2 weeks since adding wine new barrel, have topped up in last few days.

    Testing whichever way you choose will be your best indicator. But it is nice to see those tiny bubbles for sure!

    Haven't done it this way yet, but next season I will rack off the gross lees back into Brute fermenter. Add ML stir then use the AIO to transfer into carboys.

    Plan is to begin tasting after 2 weeks on first wines in it. Will go from there on whether we rotate or go a bit longer. After that pretty much same thing getting a few more weekends in each round.

    Took chromo test by Prospero Grape had the expert Alfredo there give me his opinion and all but one is ready! CH-16 is now my go to MLB thanks @JohnT Next week will begin barrel aging. We have a 23L Vadai, and a total of 56 gallons of wine. I know I won't be able to rotate all carboys...
