    Making Pinot Grigio and want to know about adding oak chips.

    I am not a big white wine drinker but I did make a WE Pinot Gris kit by request. I didn't oak it but I did add a dose of Tannin Riche Extra to it about 2 months before bottling. I don't know what it would have tasted like without it but I definitely like it with it.

    I've read that vines can grow well in substandard soils, but what about clay? I have a hillside north of our house that I would like to plant something on to hide the eyesore. It is a mix of mostly clay and some veins of sand. Worthless to even try here? Thanks!

    Would a kit wine benefit from MLF? I was looking at getting a couple of bid red kits of varietals that when they are grape must, MLF is typically done. With them being kits and having acid adjustments made to them, is MLF needed or has anyone still done it? Thanks

    Why not ferment dry in the bucket/primary

    Do you risk oxidation by leaving it in primary too long if the wine is not producing CO2 to protect it anymore? I have always racked at 1.010 to 1.020 and let it finish in the carboy. Maybe I need to change my ways?
