    Sodium Metabisulfate Mistake

    Man Tom is right on as usual. Did you use Sodium or Potassium Meta? That much Sodium may alter the taste in the wrong direction. Either way that is a ton of Metabisulfite ! 2.5 tsp vs .25 tsp hum. One thing for sure though is that it is sterile. Keep us posted and dont give up yet.

    Yeh you wont be drinking the skins ha ha. Never tried boiling them?? I froze mine and after thawing smashed them. Got alot of juice around 60% I would say. Keep us informed.

    No, wine does get better with age. It is just that some wines cant age long enough to "fix" them. :sI have a Cabernat Sav. that is 11 yrs old and I am waiting for a special occasion to open it. Not sure if it will be good or not?? Welcome:b

    I doubt moving it hurt the yeast. Degassing will help the wine clear and should get rid of those pesky bubbles. Some berry wines are slow to completely ferment. Hard to judge what the gravity should be since adding the syrup but it should of read .990 when completely done fermenting. Check the...

    The best way is to juice the watermellon and use 100% juice not 50/50 water and juice. Also cut the thin layer of green "skin"off first. This will help with the rind taste. There is just something about a watermellon wine that is green!! Steve
