    This seems like a silly question... In my primary lid there is a rubber seal. I clean, remove, and reinstall every batch. My question is... why? I don't ever seal this bucket. I believe the seal is not necessary and should stop using it. One less thing to clean and sterilize. Thoughts?

    Truthfully bottle sanitation is one of the easier tasks IMO, and it's not costly. I would NOT advise using a dishwasher.     So, Wade or Steve... or anyone, Since I've filtered that Chilean (7days ago) can it sit in a carboy to age or should I bottle? I have always bottled 2-3 days after filtering. Was thinking this time maybe I'd let it sit to have more of the sediment drop?

    I have always enjoyed dry red wines. I become a bit more selective with whites, but agree its all taste for the individual. I took some "young" wine to family for Christmas and they thought it was excellent... I thought it was "not very good - yet". Oh well... cheers and have fun!

    I just purchased this one today. The store I deal with has rave reviews on it. The woman who normally gives me advice has made it several times. She said the wine is best when adding only half the sweetener pack, but I suppose that is best determined by your individual taste.
