    I`ve found ebay to be a good source of cheap stuff, you have to be sure to take note of the sellers feedback though, not just for wine kit and stuff, I tend to buy a lot of stuff from ebay I cant obtain locally and for that its very handy.

    I tend to sprinkle some bentonite into most of my wines, usually about 1/4 to 1/3 of a teaspoon per gallon, at the same time as I add the yeast, although, as others have said it isn't strictly essential.

    It could be lighter particles from the sediment ie less dense than the wine I would syphon it off and have a taste if it is fine would drink it. Also follow jericurls advice as well, that should cover it.

    @duster the pool strips you refer to, if they are yellow, that is called universal indicator, I have some I got from ebay (but don't use them often) They are a very good indication of ph value.

    So here is MY thought or Conclusion of my tests so far. Do Not use Sodium Metabisulphite in Tablet or powder form. (if sensitive to it) . Instead only use Potassium Metabisulphite K-Meta in powder (bulk package) at 1/4 teaspoon per 6 gal. And see if you can tell a difference. (I sure can)...

    Not sure what that would be classed as dawg, but, it sounds nice ;-) honey is a rarity around these parts. Im not surprised it tastes nice as the thickness in the honey, should add some nice mouth feel as well as sugar.

    Foam at end of fermentation

    To be honest I have no idea whats causing the foaming, but, I would tend to leave it in the container its in, before moving on as you may well get spillage due to foaming, it will settle down eventually what ever the cause is, that would be the best time to transfer to demijohn.
