    Are CO2 "Burps" expected @ 0.990~0.995 SG ?

I feel like I'm hijacking here but I meant initial stabilization (roughly 10 days post ferment), not pre-ferment. I've always thought of 1/4 tsp per 6 gallons was standard treatment but the kit kmeta pack had a full 1/2 tsp in it. That got me wondering.

    Are CO2 "Burps" expected @ 0.990~0.995 SG ?

Scooter, it's funny that you mention the 1/4 tsp of kmeta for preservation or pre-treatment. I was stabilizing a cherry pomegranate wine that I started from juice just yesterday. I've always wondered why the kits seem to have a bigger dose than that for initial stabilization. So I measured a...

    FREE WINE!

The Tawny Porto was fabulous! Some of the best commercial wine I've ever had. Ok, talked to my daughter and told her that I had a little worry over the legality of said giveaway. Her reply was that they are not governed by the same rules as law enforcement. They have to keep evidence for a...

    FREE WINE!

meadmaker, I'll ask her tomorrow as to the actual protocol that they follow. Like I said earlier in this thread, I don't know any of the details other than what I've stated. For all I know, she purchased them and then gifted them to me. I do know that she would not bend the rules and risk her...

Bartman, I know nothing of the details of this incident. But I can tell you that she is by the book for the most part. She is also compassionate. I'm just guessing, but I'll bet that the confiscation and tongue lashing to this person was probably all that he/she got instead of being thrown back...

    FREE WINE!

I have a daughter that is a probation officer for the county. She recently busted one of her "clients" and confiscated a few bottles of wine that were at the residence. She gifted me 4 bottles in a bag and not being too fond of commercial wine, I thanked her and threw them in the car. When I got...

    Stupid or brilliant?

The first days of retirement are blissful. It was the months before, that scared the Schmidt out of me! You are the kind of guy that will retire gracefully. You have enough hobbies and interests to keep you busy. You will look back a year from now and wonder how you had time for all this fun...

    Corks Don't Breathe

Why are you supposed to wait a few days before laying your bottles down after bottling? Isn't that to let the compressed air to vent through the cork?

    Other Tweeking Cheap Kits

A number of you have added cocoa powder for that chocolate note. Has anyone who has done this had problems with the wine clearing? I have a raspberry port with dutch chocolate powder that has been aging for a year. I've tried double doses of bentonite, super-clear and pectic enzyme. I am...

    First attempt at homemade wine

You don't need the app to figure out you ABV. Just take the starting reading (say 1.09) and subtract the finished reading (say .990) and multiply x 131 = ABV. 1.09 -.990 x 131 = 13.1% If you back sweeten the wine you will reduce the ABV slightly. Don't forget your sorbate if back sweetening.

Is it done fermenting yet? beginner here

If you are below 1.0 and get the same reading 3 days in a row, you're done fermenting. At that temperature the ferment was probably done in less than 2 weeks. Rack and get it off the gross lees soon. If the ferment is done, you start stabilizing and aging. If the action in the trap just off...

    Port won't clear

OK, fast forward 5 months. I hit it with pectic enzyme before leaving for the winter. Came home, racked, kmeta, more pectic enzyme 3 weeks ago.....still cloudy. I have now done 2 doses each of chitosan, bentonite and pectic enzyme. It also sat in a cold (45 degrees) dark basement over the...

    Well water for wine question

I have some information to share. I was a plumbing contractor and water specialist for 30 years. I am also on well water. City water, although OK to drink (most of the time), has chlorine added by the city. Let water stand overnight (uncovered) and the chlorine will evaporate. However, (most)...
