Thank you for the kind words on the wine, i have not bottled yet i started to however once i saw how cloudy it was it all went back into the BB for aging and eventually it'll get fined/filtered. my wife was surprised by the comments, she doesn't drink much wine and wasn't fond of this early on...

YAY just checked ups and it would appear that two packages were delivered successfully yesterday between noon and one. honestly usually anytime is a good time for some wine making fun, i'm just procrastinatory when it comes to bottling. cheers and good luck all.

you should be fine leaving it, a gentle rocking helps remove some of the suspended co2 but you can get rid of that by degassing later on.

a couple of jack kellers recipes say that he leaves the skin on, others say he leaves about 1/4 of the skins on. i think you're good either way you do it.
