    That is the real problem with selling the kits. Unless you have a good volume, expiration is a real issue.

    Waiting 10-12 days will not hurt at all. In fact, Spagnols has you wait 14 days before the first racking. There is still plenty of CO2 in the wine to protect it from oxygen.

    Jim, we only had 19 entries last year with 8 medals. This year we had at least 37 medals. We will need to get around 100 medals to win the retailer of the year award.
