    Wine and bee keeping blog.

There's just one problem here. Beekeeping is like winemaking - it's additive. I was a beekeeper for over 10 years when we lived in the U.S. I also started with 3 hives and 3 years later I had over 50, did pollination for farmers moving bees at night until 12:00 to 1:00 in the morning, made...

What to do with these beautiful mangoes!

Sarah, living on Costa Rica we get mangoes all year long but in June/July they get darn cheap - 6 1/2 # for about $2.00. I use 20# of skinned, deseeded mangoes to make 5 gallons. After backsweetning and aging 6 months the results are like a sweet reisling. Mike

    Oaking an Aging

I made 4, 6 gallon batches of cabernet sauvignon from concentrate. Except for the control batch with no added oak cubes, each had oak added of Amerian Oak, French and Hungarian all in House Toast. Each had the oak cubes left in for 2 months. Acid was at .65 and the concentrate was all from...

    Sour/Tart Taste

Assuming that you have adjusted your TA after fermentation you in most likelyhood still have a sour or tart fruit wine. I have found that almost all fruit wines require sweetening. My wife likes sweet wines while I like dry, so she is easy. At the very least I have found that I have to...
