    Getting a sample out of a 1 gallon jug

    that leads me to ask, that if you don't plan on backsweetening a wine, do you still need to add potassium sorbate? Also, what is th eopinion of when to backsweeten? Should you do it after the wine has had some time to age? :r

    Luc, I wasn't really aiming at 14% alchohol. I added too much sugar to get the starting SG where I thought it should be. Any thoughts how to correct that? Should I stop fermentation earlier? Say something above 1.00?
