    Before deciding on what yeast to swap for, be sure to check out the more winemaking.com guide to yeast selection. Rc212 isn't one of the recommended for Nebbilio. I think I would go with the AMH or BM45.

    History from other folks is that the 4007 never really starts. I seem to remember that the maximum allowed SOw for it is incredibly low. But maybe you got lucky.

    One way to stop malolactic fermentation is to add Lysozyme (and I may have misspelled that slightly) and probably sulphate at the same time.

The activity from MLF is very subtle too almost nothing. It does take potentially a fairly long time (2 to 3 months) for MLF to complete and the only way...

    Super Tuscan has been one of my favorites. Along with the Bordeaux Blend. I have a Baby Super Tuscan, a Chianti, a Sangiovese all going in the basement now that all taste really good at this point in time.
