    2009 White Salmon Chardonnay

Frozen Juice from Midwest, Started 3/10, started MLF 4/9, Re-racked 6/10, Sg .990 PH 4.01. Calculating my So2, the chart stopped at 4.00, I added 3 grams. Will check for free SO2 before bottling in a couple of months. Now the questions: with that high a PH should I add Sorbate? If not why...

Edon Knoll Zinfandel from Brehm Vinyard

The staff at Midwest recommended to not do MLF in the Chilean juice. I guess they're pasteurized or homogenized, or some kind of ized. bk

De gas, de gas, de plane, de plane

I use the the ol' vacuum pump when racking which causes quite a bit of foam, so I guess I'm degassing some but will step up the effort. Maybe degassing is like what they say about voting in Chicago, vote early and vote often. bk

De gas, de gas, de plane, de plane

Should wine be de gassed at every racking ? Or is it better to leave the Co2 in ? bk

    Juice Buckets

I started four buckets of Chilean Juice on 5/6, transferred to carboys 5/13, I was thinking of racking again but not really sure why. Should I rack when SG stabilizes or just let them sit for a month on the Lees? What say ye? bk

    Filter Question

The filters I have for my whole house wine filtering system are a hard compacted type of medium , from Lowe's wine making department. After use I wash bag and freeze, it looks brand new, just to be on the safe side I boiled it today for about 20 minutes to clean out any bugs but maybe I'm being...

    WineXpert Austrian Gruner Veltliner

Racked, So2'd, and added about half the package of Sorbate that came with the kit, which leads me to the next question. No back sweetening, who uses sorbate, how much and in what kind of wine. bk

    WineXpert Austrian Gruner Veltliner

About 4 weeks into the secondary and according to instructions you're not suppose to rack but stir everything back into suspension and add the goo that comes with the kit to clear. My question is it's clear now why can't I just rack and stabilize it? I'll probably age it for a few months and...

    First batch ruined!!!

I believe human pee is sterile, it may just add enough acid to make a great wine... Try my new wine it has a really: #1 strong finish. #2 a flavor I can't quite pick out. #3 great flavor if you don't mind the ammonia odor. #4 really... let's just say it reminds me of my children...

Started a WineXpert Portuguese Douro kit which contained 5 packages of oak, I wonder if they put in too many? 2 packages of sawdust, 2 packages of small chips and one package of "special Oak"? Maybe they think I making chip board? bk
