I just got my RJ CC Washington Merlot in. It's the most expensive kit I've bought so far. I was curious how you guys make your kits better? Any deviations from the directions or hints. Since I won't really be able to try it until next year I want to make it the best I can.

Hmm maybe I'll go pick up a few bottles from the store and sit down and compare them to mine.

Can you old pros describe the wine kit taste to me? I'm not a very sophisticated wine drinker. Been drinking it for about 5 years but have never really had an education on tasting and describing wine. I just know what I like. Some insight on kit taste would be great.

Cool. That was exactly what I was looking for. I'm going to buy a couple five gallon carboys anyways. It will make bottling easier and I want to make some skeeter pee. My birthday is coming up so I'll ask my girlfriend for a burner and a brewpot. I don't think my ceramic range will hang.

Well I have a borderline problem with alcohol. Back in the days on the submarine I had duty to regulate it. Now no duty so I pretty much drink six days a week. How about you guys?

Alright don't get mad. Just to make absolutely sure. Ferment in primary. Then rack to secondary. If beer makes a bunch of co2 and the airlock is always on then why can't i use a 6? not enough co2?

I made this kit over a month ago. Still in the carboy and cloudy as hell. I racked it and it's been about two week since. Still cloudy. Any suggestions?

So the extra room causes it to foam up? If it doesn't have a lot of head it wont foam?

Is there any reason to buy a 5 gallon carboy? I got a bunch of 6 gallon carboys and I want to make some beer. I figure the 6 gallon would give you some extra head space for the foam. pros and cons? Thanks, Jason
