3 gallons of Vidalia Onion wine

I made a dry onion and potato wine that looked just like a fine chardonnay. If you had a cold and your nose was stopped up, you might even like the taste, as I did put white raisins and used some white grape juice as well. After a year in the bottle very faint taste of onion, but trust me, it...

    What R you doing today?

Working on employee reviews. 2am and two more to go, but I'm on the forums. Writers block or procrastination... but I keep looking over at my wines that need racking and bottling. Sometimes this ADD thing really gets in way of getting work done. Did I mention I worked in the vineyard this...

    Post your labels here

Same blueberry, blackberry and raspberry wine, but two different labels. Friend asked me to create a label for his wife's 50th bday. 12 bottles was polished off between 15 friends that night. Good times...

Large Batches from Multiple Wine Kits

Enologo I've wanted to try the juice pails but haven't had the opportunity. I'm trying to get off the kits and as my vineyard starts producing I will. Please give us your recipe for the pails and grapes. I assume 1 lug of grapes in addition to the pails?

    Murphy’s Wine

Thanks Cher. Those are some nice looking grapes. How long did you keep on skins before racking and pressing?

Large Batches from Multiple Wine Kits

I will test the TA and PH and see if it is a candidate, but I see your point. I hope others will chime in and give me some suggestions.

Large Batches from Multiple Wine Kits

I would like to reenergize this thread if possible. Background: I'm working on a vineyard but not producing for another couple years. Until then, buy grapes and/or kits to fill the void. My recent plans of large purchase of grapes for a big batch failed. I have these two empty 100L...

    First glass

I think your ABV is more like 12.23% Depending on your yeast selection you might get to 14 - 18%.

    Murphy’s Wine

Murphy’s wine after Murphy’s Law (Anything that can go wrong will go wrong). The plan: My Vineyard is young and I will not get grapes next year but the year after should be somewhat productive. I went ahead and picked up a couple of 100L variable capacity tanks and decided to practice this...

    What R you doing today?

Congrats Julie! I have four daughters and do not look forward to the day! Three have flown the nest so its just a matter of time. I started Island Mist Green Apple Riesling (boosted SG to 1.075) and Selection Italian Montepulciano today.

    Blueberry wine issues

Many recipes call for 1 tab per gallon when you rack. The free SO2 diminishes over time. You could add 2-3 tabs at your next racking, but I wouldn't add every time you rack especially with blueberry. It's not uncommon for Blueberry wine to have PH < 3.0. The lower the PH the less amount you...

    Blueberry wine issues

Blueberries like very acidic soil and would stand to reason the PH level might be low in your must. The one batch I made had a PH of 3.0. Have you checked your PH level? You put 5 tabs in already. Are you making 5 gallon batch? How long do you plan to wait before you consume?

    First Watermelon Wine

Hey Jules, why of course I had to sample it! It has a subtle hint of watermelon smell and actually taste okay. Still gassy, but will settle out in time. I think this is going to be a nice wine. I'm very pleased it is working out. I don't think I will need to back sweeten it either. I'll...

    First Watermelon Wine

Update on watermelon wine. It's been 17 days since I started and racked second time tonight. Here are the measurements. SG = .990 (started @ 1.084) TA = .60 PH = 3.6 (dropped from 3.71 start of fermentation) SO2 = 32 (increased to 55 tonight) Still had a great smell and better tasting...

    Cannot drink store wine

I was driving back from beach today and missed several post. Got exciting in here for a bit. I decided to do some testing tonight that forced me to open and drink several wines, hence the late post. What I concluded in my testing of SO2 in commercial wines backs Calamity to a large degree...

    Cannot drink store wine

I have a friend that doesn't drink much wine because he gets really red in the face after a couple of glasses. His doctor told him it might be the sulphite in wine. He claims my wine does not have the same affect. I of course use sulphites in my wine as well, but I try my best to go with...

    Tweak Your Tank

That's great news John! Like anything you usually hear all the horror stories and not the successes. So the gaskets hold a good seal? How often do you need to pump them up to maintain the pressure? The 100L also uses the marble airlock system. Lots of folks say to remove so wine does...
