    I just bottled a batch of blueberry and I had some left over and tasted it. I won't say it was bad, too early to tell. It's watery but it has a strong alcohol taste and I'm wondering if I should dump it and start over or if after 4-6 months it'll get better. WSG

    5 years. I was under the impression that the alcohol content wasn't high enough to do good aging? Everything I've read so far has said that alcohol over 12% will last longer. The red wine I made had a reading that was the equiv of like 9-10%. I was planning on adding sugar to my kit. WSG

    thanks again wade. Sometimes it's ahard to navigate the older posts. I don't know about others but sometimes I'm unsure of how to word the question that I want to ask. Thank you again for your help and patience.

    Right I added potassium metabisulphite, yesterday. I'm wondering if I can just not add the sorbate at all? I don't want to chance continued fermentation and possible exploding bottles (though I checked the SG and it's below .999.
