Agreed whites are better in smaller volume kits. Salcoco. If you remember which whites stood out the best that you made from them and did you do any tweaking, changing yeast, cool ferment, or sur lees. Thanks for the help.

    Other US Elite winery supplies

I've been ordering for 2 years and they are Always out of grape packs. If u like Chardonnay they have a good one and I recommend stirring on the lees for 2 months before clearing. Use d47 or q23 yeast. Also i make their resiling and gewrtraimer both dry which are great. They usually just...

    Riesling yeast?

Been using q23 for most of my aromatic whites with good results. Try to ferment a little cooler like 65.

I think I may have posted on us elite before but I have been using them for a while now. Have a small business so use my tax Id. As for quality they are all smaller format but that does not affect the product particularly the whites have all been great. Side by side with ecplise white...

    Other grape pack recommendations

I have a small company so i use my tax I'd and order from them. Find someone that you know that has a small company or apply for your own tax I'd and then order from them directly.

    Other grape pack recommendations

Hey so I have done probably 8 or so varieties from us elite over the last year. I have done both whites and reds and have not used a grape pack. Obviously the reds turn on light to medium body but for varieties like cab franc and Sangiovese which I am making again they turn out awesome. Great...

    My Aeration-Oxidation Free SO2 Setup

You still making predominately the cellar craft showcase kits? I have my first double batch showcase zin in a vadai right now which is tasting amazing. If so you source the kits locally? I've been having a hard time finding a good retailer that doesn't try to charge ridiculous prices.

    My Aeration-Oxidation Free SO2 Setup

Thanks. Any recommendations on a decent but resonable ph meter. Figuring the dip sticks aren't worth trying even. Also I see calculators such as the winemakers mag one, you need to input the mg per liter of desired molecular so2. Do you using use 0.8 for whites and less like 0.6 mg/l for...

    My Aeration-Oxidation Free SO2 Setup

Thanks for the helpful info. I have recently purchased a similar setup from midwest with enough reagants for 20 or so tests. At this point I am predominately making kits are you kit makers who are checking sulfite levels correcting sulfite based on a measured ph or just shooting for a level...

For those who run brew store

Thanks for input. That's bummer about your cellar craft experience, that's main products I was thinking of carrying since there is no stores within the greater Chicago area that carry them. Maybe if I have a local area, like a warehouse for people to pick up kits at then in addition to website...

For those who run brew store

Havent been able to find much info but have been tossing the idea around of opening a small niche brew store which would carry few higher end wine kits. Does anyone know what the regulations are for these to sell wine kits, would be online only with a warehouse for local pick up only no...

Thanks for replys. I have figured a sulfite tester was eventually going to be needed. I have looked into both the Ao more wine one for 99 and obviously the more exspenisve vinmetric for 250. Any recommendations as far as speed of using each and how easy they are. Figuring going to be making...
