FYI...one guy who works at my local told me that he enjoys the lighter kits more than the Selection or the Eclipse when it comes to whites...he says you sacrifice some body but the flavor is still top notch... I myself have not made a big white as I have thoroughly enjoyed every World...

Just mix it up...120 grams of oak!! The mix tasted fantastic!! Might turn out alright after all LOL!!!

One of the nicest Canadian Whisky's for me is Forty Creek...not sure if it's available south of the border though...Tangle Ridge is another!! Bourbon is great!! So is some Irish Whisky!!!

Morning!! So...after some "extensive reading" LOL...I've pretty much come up with the same game plan!! I'll be hitting the Famer's Market once I see my berries mature...I know I won't get enough from mine this year but I'll go buy some...I'm sure I could scrounge up enough for a trial...

So...am I gonna be treating this like a wine kit?? I mean...even say I get a 60/40 split of juice and water...mid grade wine kit...do I add the same amount of sulfate as that off the bat?? Maybe some oak in the primary as well!??! Leave it sit for a while then sprinkle yeast of choice...

The WV kit...was it the Washington Riesling?? I was about to try that one LOL!!! I have the Grigio on tap right now...primary is empty...sadness :(

K...so how did you figure that out?? And yes...the more juice the better I'm guessing!!! How does the rest of the procedure look?? And the Sugar amount?? Dave
