I would guess the tartness you describe is hiding some of the flavor. All my wines have this tartness at this age. I would do nothing but give it more time. Good luck

I finished mine much the way you did with the apple concentrate. Bottled half but kegged and force carbonated the rest. The wine is aging as we drink the cider! Yum

I got my order today. It was packed poorly/ inappropriately and the contents of the original box were lose in the oversized box that is so common with Amazon. Everything was accounted for and not damaged so I guess all is good. I’m happy with my purchase but hesitant to order from them again...

I see an EBay and Amazon user selling winemaking supplies and kits and I’m wondering if this is a known retailer operating under a different name for online sales? Anyone know or have experience with this company, Quality Quick Ship?

Just had them and figured they couldn’t hurt. But I understand you asking, probably not going to do much/anything for the flavor profile of that wine.

I don’t know about the TA, but I do know that adding sugar to elderberry wine results in a cough syrup taste to me. I would be very careful with sweetening. I bet it will turn out just fine in time. Cheers
