    Frozen Chardonnay

I use a freezer with temperature controller to cold stabilise my white wines. I ser the temp at 2 degrees C and leave it for a few weeks. A few d as ys ago I transferred 30 litres of chardonnay into the freezer but forgot to drop the temperature probe in. Consequently I now have a 30 litre...

    Transplanting vines

Thanks for your advice. The soil around here is very fertile so I expect the root system will be pretty big. I will move them when they are dormant, just before spring, so i don't think I would need to move them with a ball of soil, just bare rooted. I have bought roses from the plant nursery...

    Transplanting vines

I want to relocate 9 six year old vines because the block the view from my afternoon wine drinking spot. My neighbour wants to plant them. I plan to wait until they are dormant then dig/pull them out so how. Any advice would be appreciated. What is the likelihood the vines will survive?

    Reaction when adding PMS

Thanks for that info. I suspected it may have something to do with CO2. I tasted both wines before addition and noted the 'sparkle' in the larger container. Cheers

    Reaction when adding PMS

I'm making a batch of Rose. Primary fermentation was in late March. I have two carboys full, one 10 litre and one 23 litre. The wine in both containers have been treated identically. Today I added PMS to get 30 ppm so2. When I added to the 10L there was not reaction but when I added to the 23L...

    G'Day

Welcome to the forum. I interested to see how you go. I'm also based in Melbourne (well.. Korumburra) and had a 100kg of Shiraz from Heathcote on order but had to cancel because delivery ended up clashing with a booked holiday. I still have my own Pinot noir & Chardonnay grapes so not at a loose...

    Pinot noir berries shrivelling

Thanks for your comments. I have looked more closely and agree it's not disease, the smaller berries are just over ripe. I sampled as BigH suggested Large berries Brix 20 Small berries Brix 26.5 I'm going away for 3 weeks (bad timing) so decided to harvest half of the grapes now to make Rose...

    Pinot noir berries shrivelling

My grapes are a few weeks from harvest but many of the berries are staring to shrivel/dehydrate. I have had fruit set issues this season due to the weather and hence have bunches with a mixture of large and small berries. The small berries seem to be more affected than the larger berries but...

    pH & TA both high

Good article, I'm going to add tartaric acid to correct pH and worry about the TA later

    pH & TA both high

Thanks, I have about 170 litres so I could try to chill it in smaller batches. This is my own crop with Brix about 25. It's been a very mild summer so I was surprised to get such high sugar, last year it was about 22

    pH & TA both high

I have just crushed my Pinot Noir grapes and the must pH is 3.9 and TA is 0.97 These are both higher than I would like. I could add tartaric acid to reduce the pH but I believe that would push the TA even higher. I would welcome any recommendations on how I should proceed.

    Retirement VS working

I started to retire about 5 years ago by cutting back to 3 days per week, I'm 67 now. Initially all time was in the office but after about year or so I built a house in the country on a a few acres and started working mostly from home, only going into the office for a day once every couple of...
