    WineXpert Private Reserve Colosso

I recently bottled my WineXpert Reserve "Enigma" and it turned out great. I used RC-212 yeast instead of the EC1118 that was included in the kit and aged it in the carboy for 12 months. I didn't use any clarifiers, letting time do the clearing. Turned out to be the best I've ever made. I'd say...

Finer Wine Kit When Does The Aging Clock Start?

Thank you all for your responses. I think I have a better understanding of the kit wine making process. I'm pleased with the results on my Chardonnay. It's clear and enjoyable. I'm the first to admit I may be overthinking this but I feel like I'm missing something I should know. My Chardonnay kit instructions says the wine should be aged 4-6 months. Got that. However, I don't have a clear understanding about when the clock starts. For example, I pitch the yeast on 7/1...

    WineXpert Clearing Without Fining Agents

Update: The S.G. came in at .994 this morning so I racked it from the fermenter bucket to a carboy, added 1/4 tsp K-meta, stirred to degas and installed an airlock. I put the full carboy on a shelf and wrapped a towel around it.

    WineXpert Clearing Without Fining Agents

    WineXpert Clearing Without Fining Agents

I'm fairly new at wine making and have much to learn. I'm trying to get better at it by studying all the good postings on this forum. Much of it is still way over my head. :? I've recently read Winemaker81's postings about clearing red wines both with and without kieselsol or chitosan (K&C). He...
