    Got a quick measure on my Itasca, it's at just over 23 Brix and acid seemed a bit low when I tasted. Hoping to pick this weekend before acid drops too much more (but it is a busy, busy time...)!

    One harvest last year and ripening was an issue for me too. Picked into mid-October hoping acid would come down. Tasted ok from the carboy earlier this month so I'm hopeful once it's bottled.
