I have two primaries but only one with a spigot (I love it!!) and not enough time to get a second one and a bit for my drill before my two MM pails get here. I have an Amarone and Pinot Grigio coming. Which should I put in the one with the spigot? The Amarone that has raisins making it easier to rack or the PG which is more susceptible to oxidation?

Decisions, decisions!!

The Amarone is just juice and no raisins so I don't think it would make a difference which goes in the bucket with the spigot. The Amarone will have more a bit more lees when it is time to transfer to the secondary.

BTW: I have both of these in carboys awaiting some attention soon.

They really don't give any specific timetable but my guess is minimum 6-8 months. Sorry to say but their instructionsare very vague and leave much to be desired.
