ok, i'm new here and new at wine making, about 3 months and 3 thousand dollars later. i have 9 batches of wine brewing, couple 28 day kits bottled and now aging. three batches of blackberry wine, a batch of loquat, strawberry, blackcherry, co ncord grape and some i can't remember, waiting on 3- 6 gallons oak barrels, one 2 1/2 gallon barrel which i have no clue on use. reading as much as i can . we drink alot of wine here so i figured-----go for it and we did, am i hooked? i mean really, is there an end to the buy everything you might need? and not know how to use the stuff your buying?

i've learned alot from you guys and this forum, spend hours each night reading and it just makes me want to buy more and make more wine. i'm a speedy person, my biggest problem seems to be the waiting. 6 to 12 months.....ah man.

about every couple nights i break out the wine theif, good name for this tool, i almost feel like getting into camaflage before i start stealing from the carboys, theres no diffence in taste after two nights, lesson learned.

so a question for you guys. when does it mellow out or rather when do i mellow out, when i go the the grocery store i'm drooling over the fruit section. went to walmart yesterday, came home with enough watermellons and strawberrys that i spent the whole afternoon, cutting and chopping fruit to throw into a fermentor. went half and half into the same fermentor. will it work? who cares, i'm having fun watching the stuff bubble

just looked thru a thread where you guys posted pics of your wine tables and rooms, looks lioke i might have to start nailing nails and building counters and shelves now, think when the time arises, which it will, when the wifey ask, what are you doing. theres enough wine for 10 years, i'll blame it all on you guys so you might get a phone call or email from an angry woman who's found all her pretty clothes on the bedroom floor to make room in the big walkin closets we have in the bedroom thats looking real good for a wine room about now

oh, and one more question, is this addiction normal or is it just me who's got the problem?

Bud welcome to wmt... The addiction never stops lol. Im new here as well and I am like you, see something and think Hmmm can that be fermented, the answer is maybe. I watch Amazon for deals, ebay and craigslist. So no it does not stop but will mellow out.. Enjoy. Im waiting on a batch of skittles wine to clear.. Just started a new 23L kit tonight, traveled 3 hrs to Montgomeryville PA to check out Keystone Home Brew that place is amazing. keystonehomebrew.com they have Flextanks in stock and 300L Stainless Steel tanks as well...

Have fun and enjoy but word of advise stay away from the waalk in closet.. :)

Second...I love your sense of humor. I just laughed for 10 minutes reading your post. I have my moments when i can cause a good laugh but I think you cause many more laughs than the average joe. Same thing happened to me. I have 11 carboys and they are never empty for more than a few days. If I had more room I would have more carboys.
 
:?I know the feeling. I have 5 carboys on the go. Have 2 kits on deck and another 5 ordered. I need at least 3 more carboys. I have one problem - I pushed a stopper into a glass carboy last nite - was not on the air lock tight enough - any ideas on getting it out - I was thinking a bent coat hanger or if i could get it close to the opening a pair of needle nose plyers. Help:slp

Edit: got it out with plyers - the youtube video was really cool. Thanks

Check this video out on removing a cork from a bottle. It should be the same to remove from a carboy.

You said one thing that concerns me. You said that "you break out the wine thief".

I assume that you are sampling the wine. My question is... Do you top off what you are sampling or simply leave an air pocket?

Leaving an air pocket (headspace) is not a good thing. It can lead to oxidation.

I DON'T KNOW ABOUT YOU, BUT FOR ME ITS WHEN I STARTED GOING INTO CONTEST AND REALIZED ITS NOT HOW MUCH WINE YOU MAKE,ITS HOW MUCH WINE YOU MAKE GOOD,ONCE I GOT THAT IN MY HEAD AND ALL THE CONSTRUCTIVE VERBIAGE I COULD UNDERSTAND, THE STATEMENT THAT" WELL I like my wine the way I MAKE IT" ,REALLY DOESN'T HOLD WATER IN THE REAL WINE WORLD ,i SETTLED DOWN TO THE ART OF WINE MAKING AND NOT JUST FERMENTING JUICES..THAT'S WHEN IT HIT ME..:slp THAT'S MY STORY.
 
been topping them off , i keep the wine about 1 1/2 inches below the stopper right up in the neck
