Apple haze---gone!

Have five gallons of apple bulk aging since Sept. and at last racking still noticing quite a haze in the bottle. This is after using pectic before ferment and after the first rack trying to clear it. Yesterday I decided to try Super Kleer that I had on hand and added before 8:30 A.M. and when I got home about 7:30 P.M. most of the suspended had settled out. This A.M. I can see right thru the carboy and at the one behind it. OMG the clear. My concern at this point is what effect will this have on the wine. Anyone do a taste before and after to see a difference? My hope is it's minimal. In the past I have just let my fruit wines clear over time but this was really hazy.

SuperKleer should not effect the taste of the wine. I always sample along the process and I have never noticed a difference in taste other than being better due to the additional time prior to racking again after the addition of the clearing agent. Super Kleer is a great product.
 
One thing I forgot is should I rack soon or let it sit for the next 2-3 months? I had just racked before adding SuperKleer. To bad I had not done this in the opposite order.

I would let it sit a minimum of 3 more weeks prior to bottleing. Longer if you are not in need of the carboy but I would still rack off any lees from the superkleer in 3-4 weeks.

Agreed. I would rack off the lees in 3-4 weeks. Then let it sit for another month - to ensure any floaties that might have made in the transfer drop out. Then rack again and bottle.

Be sure to keep your SO2 levels up as well.
 
Actually intend on letting this age till August or Sept. since I do not need the carboy yet. Have one with pee in ready to bottle and my blackberry will be bottled the end of May so could have three empty soon. Better get another batch of pee going, hate to have so many empty.

Sounds like a plan. You can alway bottle later if the carboy is needed. I just finished up bottling pee a week ago and have another batch to be bottled before Memorial Day weekend. Juice comes in tomorrow so that will take care of 6 of my empties.
