I'm getting ready to start apple spice wine for this fall, excited to try again but a bit hesitant. My very 1st wine( which was orange wine) did not turn out well at all! Any advice? Any common mistakes I should keep an eye out for while making this apple spice wine?
 
Go easy with the cloves and cinnamon. They tend to get rather overpowering. Use pure apple juice, don't water it down. Apple doesn't have a strong flavor so it is best to use the juice full strength. Arne.
 
I would ferment the wine without the spices. then add after wine is complete and clear. make extracts with alcohol of spices you wish to add. then do bench trials to decide the amount you wish to add.I had good luck using vanilla and cinnamon extract on my apple wine after fermentation. Vanilla need to be the clear type can be found on net.
