I hope to achieve a kind of equilibrium in the cellar. After all, storing empty bottles is so much easier than full.

I start the wine first then worry about bottles. I like to live in the edge like that!

Once you have a pipeline of wine going in various stages and inventory the stress goes away and you are no longer on a clock. Time is your friend here.

so true - except you become a slave to the wine. Forever thinking in the back of your mind that you’d like a little break from the bench. and when that moment eventuates, dont forget the write-up. Deciphering all those hastily written notes .. oh the joy .. and after that guess what - the wine gods demand you make more … enjoy the hobby.
