I know I asked this but was is the general consensus about fruit to h20 ratio? I have 20lbs of mixed berries to brew up and it's about time I did. I did this once and it was amazingly good. So heavy with mouthfeel and so heaving with ABV that when you drank it, you couldn't tell it was high content until you had a few glasses.
 
With the most common berries, as little water as possible. Exceptions are blueberries (I don't go more than 6-7lbs /gallon. ) .And elderberries. Someone else can guide you on those better than me. In a mixed berry wine I would go with as little water as possible. Don't forget to include additional volume initially to offset for Lee's. That can run as much as 15-20% of the starting volume.
 
Hey - also, what's the general rule for the sugar used in the wine?
 
Unless you are making a dessert wine BUT THEN you have go heavy on the fruit and sweeten more to have enough flavor.
