This is my first RJS kit and started it last Friday. In reading the directions, I understand them to say to leave the must in the primary approximately 14 days or until the SG is below 0.998. I have not left one in the primary bucket that long before and was wondering is that because of the kind of kit that it is? Just curious so I thought that I would ask. Also, if I rack to a carboy before day 14, should I go ahead and degass, etc. then or wait until day 14? Thanks for any advice and help, John.
 
That is just how RJS has you ferment their kits. As far as the racking and degassing goes let the SG be your guide.

I agree @ gravity readings. All kit mfg. want to make sure you let the wine ferment dry. To many new B's rush the kits resulting in lower expectations / taste.

I interpret the instructions to say, leave it in the primary for 14 days and by then the sg should be below .998. FYI, they usually finished about .995 when I made them at 24C in my FoP. Sorry haven't done any Orchard Breezin's forover 2 years.


If I moved them to primary before the 14 days, then I did it about day 8 with the sg below 1.005, and did not stabilize till about day 18. In the FoP, I would do that when very busy because the primaries required more room (5 to the shelf) than the carboys (8 to the shelf).

Update: I bottled 30 bottles on Saturday. The taste was great already. Can't wait to taste it after a little while.
 
All of the Orchard Breezin kits don't need ageing and they don't really seem to change! Just give it 3 weeks to get over bottle shock and enjoy them! A lot of folks out here "trunk age" these wines. That means from the Brew On Premise store (the place where you make wine if you don't have space/equipment at home) you put the filled bottles in the trunk and when you get home a few minutes later from driving the wine has aged and is ready to drink!

Thanks Dean and Appleman. Sounds like a good plan since I was going to give some as gifts for Christmas. Never heard the term "trunk age" before but I like it. John.
 
I had to come back to this topic and say that I opened a couple of these bottles at a Christmas get together this past weekend and everyone who drank it said how much they liked it. I just wanted to recommend this wine to anyone who wants a great tasting, quick drinking wine.
