Plums were picked and frozen in 2010. Fermented early Nov 2011 and bottled yesterday. My in laws are in town and wanted to try some wine so I was talked into bottling my Plum a little early. It had been sweetened to S.G. 1.006. It's pretty nice now but will be terrific I think in another 6 months or so. Interesting color I think too!
To bad I only had 5 gallons.
