Finally got around to bottling this guy. This was one of the 2010 Cellar Craft Limited Release kits and the juice came from Darlington Point Riverina NSW, Australia.Started it around mid March so its about 8 months at the moment. The left over glass was pretty amazing. Lots of dark fruits especially CHERRY. The winery smelled like cherry coke with a hint of vanilla.

Nice tannins, a little pepper and a silky smooth finish to boot. Did not add any more sulfite as it was around 45 ppm with a pH of 3.5 using the A/O unit. This is the one that I pulled a DOH! and left the oak cubes in for 6 months........

Found them when I went to rack off the fines. Luckily it did not turn into Chateau Plywood and it seems to be holding up to the oak OK.Will let it rest for another 9 months before I think about breaking into one of the 2 splits. This one should be another good one for sure.

Haven't done this one but the Kenridge Founders Series( 18 litre with skins) Cab Shiraz I bottled last week at 8 months old was out of this world. I also bottled a Cab Shiraz Merlot from RJ Spagnols Cru Select line that was almost as good. In my opinion the Cab Shiraz is the best blend in kit wines i have yet to come across.

The labels are great Mike and i'm sure your wine will get rave reviews!

After seeing your vacation pictures and video I understand why your post pictures are so artfully done with windows, barrels and flowers. It's just in you. Really looks delicious.

What you don't know is that Mike is so anal he uses a red laser to get all of those bottles perfectly lined up for those pictures. Mike. very nice looking bottles and I like the matching capsules.
 
Yep, Its all pretty easy really. I just borrow a small laser from work and bring it home and lining them all up is a snap!

Looks great Mike! I can't to hear the updates on this one. I love the purple labels and capsules. I see that you have three more reds in the works...
 
Great looking as always. I also will be curious to hear about this one. I have been pondering making the Darlington Point Shiraz.

Take a look at the photo after the one w/three carboys - I count 5 carboys full of delicious red stuff!

MM Renaissance Valpolicella
MM Renaissance Nero D'Avola
Cabernet Sauvignon (fresh grapes)
Merlot (fresh grapes)
MM AJ Petite Sirah (with grape pack)

Also have that CC Showcase Red Mountain Cabernet still to start as well in a few weeks!
