Update on this!

I had been (more than) a little disappointed with this wine the last few bottles I had opened. Its about 18 mo old now. I used one bottle plus a about a cup yesterday when I made this........

I stuck a cork in the 2nd bottle and left the steak cooking in the crock pot. When I came home from work and 5:00 came around I decided to give it another go. I have to admit that this wine made be do a complete double take. Never give up on a wine! This has really come around and developed a really nice Zin profile. Perhaps it was just as they say "shut down" for a period but it seems to be coming into its own at the moment. I give it two

Problem is when I have a wine that I am not nuts about it is easy to drink it early thinking "why not". Then by the time it comes around I have drank most of it, then I wish I had held off. Quite a conundrum.

I have about 300 bottles of commercial and 500 bottles of my own stuff. Thats plenty to keep me occupied with something. It seems like if something doesn't tast quite right it only takes 2-3 months for it to come around. Its worth the wait!
 
Mike, I'm trying. I was starting one kit every month. But that was just keeping up with that we were drinking and giving away. Most of my efforts are gone 18 months from pitch. I have been starting a kit every two weeks for the past several weeks. I have one in primary, two clearing, two aging and one in barrel. That's 180 bottles. Also have one waiting to start in a couple weeks, that makes 210 bottles. I have 110 in bottles plus 2 magnums and 2 Jerobums (4 bottels). Sadly only a couple of the bottles are what most of us would consider ready (over a year from pitch). To make matters worse many of the kits are 32 ltr kits that need to age even longer. I will say that we have given away quite a bit in the past couple months. I'm sorry . . . we really like the wine we make and so we drink it.
 
32 liter kits????? Looks like you need to start buying more commercial for awhile to give your wines a chance to come around. I know its hard to justify buying a bottle when you have wine in your cellar but it looks like thats exactly what needs to be done for awhile.
 
Yep, start stocking up on the commercial otherwise you'll never know what your wine will grow up to be and your making the kits that will age nicely......

I have an 18 month old MM R amorone. Like your OVZ, it seems to take a little time to open up after popping the cork. I decant it and let it set for about 12 hours (Yes, 12 hours!); it takes that long before the true aroma of the wine comes though. I don't even try to taste it until I get that aroma; then it tastes pretty good.

From what I have read, seems much of the kit wine can use a little more decanting than most commercials. In my particular case, I believe it is excessive CO2 that is blocking the aroma and taste. It does still have some gas in it, as it is one of my first kits. Once the CO2 is gone, what is left is pretty nice wine.

Gas or not, I really do believe it needs another year. I likely will always have to decant this one to get rid of the CO2. Live and learn!

As you wrote, with a little more time, your OVZ may be a real treat. Saturday night I opend another bottle of my commercial Predator OVZ. Man, I really love that wine! Everyone at the party liked it, too. Not bad for $12. I believe it has the darkest toast of oak I have had in any wine so far. I really like that heavy smokiness in this particular wine.

Absolutely no trace of CO2 in this wine. I use a vacuum pump. I have read multiple stories about people decanting kit wines for 12-24 hours and thought they must be

I now am a full believer. Could just be its still kinda young at 20 mo old but with just 4 hours post cork pop and 1 cup down taken from the bottle this wine had more OVZ bouquet then ever. I have decanted some of my kit wines in the past but lately have gotten pretty used to just popping a cork and pour the first couple of glasses through one of those aerators.

I hate the thought of having to preplan my wine wishes for the week as I like a bit of spontaneity in my wine drinking (as it goes with whatever is being prepared for dinner that night) as well as other things in life.

I hear you. I doubt I would be good at deciding in the morning what wine I will drink that evening. It all depends on what kind of day I am having as to what (and how much) wine I will want that evening.

You might try the Predator. It is a great example of heavy toasted oak. I buy mine at Costco.

I am getting better at degassing. It has been a real challenge for me for some reason. On one hand, trying to get all the gas out while on the other, not loading up too much O2 into the wine. I too now use a vacuum pump, which does help a lot.
 
I was hoping you would say Costco but then worried if you did ours would not stock it. We just went to ABQ and Costco week before last and that was not there IIRC. I will keep a look out for the Lady Bug label in the future. I am trying to find some of the Kirkland Signature Châteauneuf-du-Pape but that has been a no go as well. WS just rated it 91 points so would love to snag a couple of bottles if possible.
 
Our Costco's are a little different than most, because Colorado won't allow Costco to require a Costco card to get into the liquor store portion of the store. That would make the liquor portion a private club, which apparently is some kind of a no-no for alcohol.

Both our Costco stores have a separate, single entrance to the liquor portion of the store.

As a result, the liquor stores are actually independently owned stores and they don't carry the Costco Kirkland brands.

So, don't come to Colorado Springs looking for that Kirkland brand.

Mike,I have thisCC Showcase OVZin bottles and when we did a 21 month tasting a couple weeks agoit had changed quite a lot from the 18 month sample.Appears this puppy willneed 2 years.
 
Somehow you gotta know this was bound to happen...... This has been my "go to" wine for the last 3 months for cooking, wine coolers you name it. Probably down to 20 bottles or less about now....

Mine is 18M and has a lot of green flavor. I'll wait until 2 years but I am a bit surprised since my other Showcase kits seem to be maturing by 18 months. (Red Mountain Cab, Amarone, Quarter Syrah and Rosso Fortissimo.)
 
Oh you Krazy Koloradians! No Kirkland brands you poor, poor lost souls. You are so missing out on many fine wines and spirits at the usual amazing price points such as this little gem that makes one fantastico margarita! 100% Anejo Agave for $21.

Agreed. This is the first Showcase Red that was not good by 14 mo and excellent by 18 mo.....

My CC showcase Cab/Shiraz is 17 months old and still in the carboy. A couple of
weeks ago I tasted it and it is still as green as can be and has a
little bite that I don't like, which is why I left it in the carboy so long, thinking I may have to add some biolees to it. I don't think the bite is CO2. I am
surprised by it, cause I didn't tinker with it other than add a small
amount of tannins up front.



Thinking maybe it will come around in the next few months, I sure hope so.
 
Was that the regular Showcase or the LR from last Winter? My LR Cab/Shiraz from Darlington Point has been bottled for quite sometime. I have opened both splits and they were both quite good. Mine should really be just about ready to ease into here and there.

Mine was the regular Showcase kit.  Shoot!  Everything still points to CO2.  I think I might decant a small portion and see what happens.  Its been in the carboy a long time.  I don't have my log in front of me now, but thinking it might be CO2, I believe a few months ago I put the vacuum pump on it and didn't get anything.  Might need to sanitize a bottle brush, stick it in the carboy with the wine and vacuum again.So far I have been pretty disappointed in this particular kit... probably end up being my best, if I am patient with it.
