I have a few carboys in garage gold stabilizing. All dropped the volume like close to 2 inches.

So I plan to rack off sediment and bottle. Once the wine temp gets warmer it increases the volume.

Do you see a problem bottling while very cold or not?

If you bottle it cold and then store it at a warmer temp then the expansion of the wine/alcohol at the warmer temp could end up giving you no headspace whatsoever. You might even push a cork if it expanded enough.

It will need some time to degas after warming up. Cold temps hold the most gas in wine.
