I read a post with a question about bulk storage/aging of wine in a carboy. When is this preferable? Is it best to age the wine in a carboy or bottle? Thus far I have bottled everything as per directions in the kit.

the difference is that you get a moreconsistent wine over all bulk aging in a carboy vs. a bottle. Wine in a bottle will age a faster due to the fact that temp changes affect the smaller volume. it takes more energy to change the temp of 6 gallons vs. .750 ml.You want to keep your wine at a constant temp. The slower the wine ages the better.

It also leads to being able to age the wine longer. If it's not in a bottle it's harder to drink. Now everyone, put away those carboy straws!
