Can someone post a recipe for Jalapeno wine, por favor!

For a 1 gallon batch of hot hot jalepeno
20 large jalepeno... sliced. leave seeds for added heat... or remove to tone it down.
1lb golden raisins
water and sugar to 1.085
i packet of lavlin ec 1118
1/8 to 1/4 tsp grape tannin
1tbs of acid blend ... adjust as needed for taste.

IF im missing anything im sure someone will chime in.

You can even add cocoa to the mix to make it interesting
 
Read this thread for jalapeno wine. You will see several recipes including ones using apple juice. If you plan on sharing this and like things medium hot to hot then I would suggest only 10 peppers per gallon. Slice them up seeds and all and put in a strainer bag (these can be purchased reasonably at Home Depot in the paint dept.) into the primary. This thread will take you right up to bottling by several members.
 
abefroman, Take this warning serious.:rdo After using your primary and carboys wash them very well with soap and water and then let them soak with oxy clean for at least a day.

I have a separate primary, that I used for it . An icing bucket.. wash it very very well.!!!!

Here is a hot pepper/ apple wine I made a few years back. It turned out great and made a super cooking/sipping wine.
The recipe:

Nuclear Apple Cider/Pepper Wine

5 1/2 Gallons fresh pressed apple cider juice.
6 Campden Tablets- crushed
2 Tablespoons Tannin-powdered
3 Tablespoons Yeast Nutrient
2Tablespoons Yeast Energizer
3 Tablespoons Pectic Enzyme
7 pounds sugar to bring SG upt to 1.090(started at 1.045)

1 Peck of hot peppers- pureed after removing stems- remove seeds for less heat
Pour the pureed peppers in strainer bag and add to the primary.

Wait 24 hours and pitch the yeast. KV-1116

Thanks for the tip! Does that hold true for all fruit wines? Or just jalapeno/pepper wines?
 
Sure you want to clean them all well but with the jalapeño wine if you don't get every little bit of that oil residue off your vessels that flavor and heat will leach into your next wine. Believe me I did it!
