Can't seem to degass wine

I've been working with a kit wine for about 3 months now. 6 weeks ago I racked it after the secondary fermentation, degassed 3 times for 5 minutes over two days, and then added oak and replaced the airlock. 6 weeks later it still has a strong zing on the tongue. Racked it off the sediment and degassed for 5 minutes 3 times yesterday. I swear theres no change at all.

Is it not degassed or is there something else off? The thing that really gets me is the is a Syrah and my first batch of wine ever was a Cab/Zin blend from the same company. I didn't degass that one propertly and it's always retained a zing and is nearly undrinkable, IMO. This wine tastes almost exactly the same!

Ideas? What am I doing wrong or is something else wrong with it? Could this be from it getting too warm? I do struggle to keep temps low enough.
 
Time and patience will take care of all your troubles. Just let it sit for a few months and it will degas and clear itself.
 
It does sound like it is not degassed yet. To tell whether that is the case, take a sample of the wine into a small vessel, cap it (for example, with your hand), shake it, and then uncap it next to your ear. If there is still gas, you should hear a little "puff."
 
Yup, in time wine will degas naturally. I age my wines 2 years and never have to degas.

If you want to speed it up a little, try warming up your wine to, say, 80 degrees and try to degas again.

I personally have not had good luck with letting time do the degassing. At 8 months I have had kits still gassy. I figured it was because they are topped up and only have a surface area of 1.5 inches near the top of the carboy, not much space to off-gas in a reasonable amount of time.

My best piece of equipment is the pump that goes along with the Wineeasy from Blichmann. I am sure any pump will do, but it attaches to a silicone bung and with a flip of the switch you can watch all the gas come out of the wine. 30 -45 min later while I am doing other things it is completely degassed.

A pump of some type is my recommendation, it is the "set it and forget it" method of degassing.
 
I age my wines for a year and rack every three months and I never have to degass. If you are not racking your wines every three months and adding k-meta, you should and you won't have an issue with degassing.

Might want to check into the Allinone pump. It will degas under vacuum. Works great on kits!
