I was lucky enough to stumble upon a Wine Expert Chocolate/Raspberry Dessert Wine Kit at a wine supply store. I was so anxious to start it that I accidentally added the chaptalization pack during the primary fermentation. Is it ruined? I am so bummed! My SG was 1.120.

Not ideal, obviously, but I think you can recover. What yeast did you use? Personally, I would now make a starter with another pack of yeast, maybe EC-1118.

I used 2 packs of EC-1118. They came with the kit. What do you mean by "starter"? Sorry, I am so new to winemaking.

A starter is when you rehydrate the yeast according to package instructions, and add small amounts of must to it so it becomes very active before you pitch it.

That said if you added 2 pkg of 1118 then I would just wait a couple of days, it will most likely take off just fine.
